Potatoes are a familiar and even everyday product on our table. So much so that some mothers consider them too simple to include in their baby's menu. And in vain, because this vegetable has many useful substances, and potato dishes can be unusual and very tasty.

Potatoes are a real source of useful fiber, vitamins and minerals. This root vegetable is rich in potassium, ascorbic acid, B vitamins (choline and folic acid), K and E, as well as calcium, magnesium, phosphorus, sodium, iron, iodine, copper, fluorine and zinc.

And if you combine potatoes with lean fish and meat, dairy products, or other vegetables, it will be twice as tasty and healthier!

Green cream soup with potatoes

Take: 1 liter of vegetable broth or water • 200 g of spinach • 100 g of arugula • 1 bunch of lettuce • 2 potatoes • 2 onions • 4 cloves of garlic • vegetable oil • salt • pepper • crackers.

  1. Peel the potatoes, onion and garlic and chop finely.
  2. Heat the oil in a saucepan, add the onion and garlic, and fry over medium heat until soft (10 minutes).
  3. Add potatoes, pour in hot broth (water), bring to a boil, cook until potatoes are tender.
  4. Chop the spinach, arugula, and lettuce, place in a sieve, place over a pot of boiling water, cover, and steam for 3 minutes.
  5. Add herbs, salt, and pepper to the soup, bring to a boil, and remove from heat.
  6. Blend until smooth and serve, garnished with crackers.

Take: 700 g potatoes • 1-2 eggs • salt • 1-2 tablespoons flour • olive oil • 100 g arugula • 1 sprig of cherry tomatoes.

  1. Boil the potatoes in their skins, peel them, and mash them.
  2. Add salt, add eggs and a little flour, mix.
  3. Roll sausages from the resulting mass, cut into pieces.
  4. Roll them into balls and flatten them.
  5. Boil in salted boiling water for 5-7 minutes, drain in a colander, and let the water drain.
  6. Place in a saucepan, drizzle with olive oil, and stir.
  7. Place on a plate, garnish with arugula and tomatoes.

Potato roll with meat

Take: 1 kg of potatoes • 500 g of spinach • 40 g of melted butter • 250 g of flour • 4 eggs • 500 g of minced meat • 1 onion • 1 slice of bread • salt • grated nutmeg.

  1. Mix the minced meat with a piece of bread that has been previously soaked and squeezed, and chopped onion.
  2. Boil, peel and mash the potatoes.
  3. Add butter, salt, nutmeg, and 3 eggs to the cooled potatoes.
  4. Mix everything until smooth, add flour and knead the dough.
  5. Roll out the dough 1 cm thick on a floured towel.
  6. Sprinkle with an even layer of spinach and meat.
  7. Roll up the roll, place on a greased baking sheet, and bake for 50 minutes at 2000 C.
  8. Brush with beaten egg and bake for another 10 minutes.

Take: 400 g of cod flesh • 2 potatoes • 2 eggs • 3-4 tablespoons of milk • 15 g of butter • 4 peas of allspice • bay leaf • parsley • 1 onion.

  1. Boil the potatoes, mash them, and mix with hot milk.
  2. Boil the fish fillet with allspice, onion, and bay leaf.
  3. Cool and chop the fish with a blender, mix with the puree.
  4. Add butter, beaten eggs, and chopped herbs.
  5. Put the mixture in a greased baking dish, steam for 20 minutes (you can bake in the oven in a water bath).

Age – from 1,5 years old.

Pink salmon casserole

Take: 10 cherry tomatoes • 1 leek stalk • 4 tablespoons vegetable oil • 600 g boiled potatoes • 500 g any fish • 100 g grated cheese • salt.

  1. Wash the cherry tomatoes, dry them and cut each one in half.
  2. Cut the leek into rings and lightly brown in vegetable oil.
  3. Cut the potatoes into strips or grate them on a coarse grater.
  4. Cut the fish fillet into thin slices and salt it.
  5. Preheat the oven to 1800 C.
  6. Line a baking dish with greased parchment.
  7. Place grated potatoes (about 1,5-2 cm thick), leeks, fillets, tomatoes, and cheese on it.
  8. Bake for 40 minutes.

Take: 3 medium potatoes • 200 g cauliflower • 1 carrot • 1 onion • 1 clove garlic • 3 tablespoons sour cream • 100 g hard cheese • 1-1,5 l water • salt • ground pepper.

  1. Peel the potatoes and cut them into pieces.
  2. Divide the cauliflower into florets. Pour water into a saucepan and bring to a boil.
  3. Put potatoes and cauliflower in it and cook until cooked.
  4. Peel the carrots and grate them on a coarse grater.
  5. Peel the onion and garlic and chop finely.
  6. Fry the carrots, onions, and garlic in vegetable oil.
  7. Add to the soup and cook for another 3-5 minutes.
  8. Remove from heat and blend with a blender.
  9. Put back on the heat, add sour cream, bring to a boil, season with salt and pepper.
  10. Remove from heat, pour onto plates, and serve, sprinkled with grated cheese.

Omelette with potatoes

Take: 3 chicken eggs • 150 g potatoes • 3 tablespoons milk • 20 g cheese • oil for greasing the mold.

  1. Boil the potatoes in their skins, peel them and grate them on a coarse grater.
  2. Grease a heat-resistant dish with oil and place the potatoes on it.
  3. Lightly beat the eggs, add salt, add milk, and mix.
  4. Pour this mixture over the potatoes.
  5. Sprinkle with grated cheese.
  6. Bake in the oven until done.
  7. You can serve it with sour cream.

Take: 500 g of minced beef or chicken • 1 kg of potatoes • 1 carrot • 1 onion • 2 tomatoes • 100 g of green peas • 100 g of butter • 100 ml of vegetable broth or water.

  1. Peel the potatoes, cut into pieces and boil until cooked.
  2. Mash into a puree with a small amount of butter.
  3. Grate the carrots on a fine grater.
  4. Finely chop the onion.
  5. Put the minced meat, carrots and onions in a pan and fry for a few minutes.
  6. Add vegetable broth or water, salt, bring to a boil, and simmer, covered, for 15 minutes.
  7. Boil green peas in salted water for 5 minutes.
  8. Cut the tomatoes into pieces.
  9. Place the tomatoes in the dish, and top with minced meat and vegetables.
  10. The third layer is green peas, and on top of that is mashed potatoes.
  11. Place pieces of butter on top of the puree.
  12. Bake in the oven for about 1 hour.

Take: 800 g potatoes • 4 eggs • 100 g butter • 100 g cream • parsley • salt.

  1. Boil the peeled potatoes, drain and strain the broth.
  2. Mash the potatoes, mix with egg yolks, cream, and beat the egg whites until stiff peaks form.
  3. Put the resulting mass in a buttered mold, put it in boiling water and boil for about 40 minutes.
  4. Transfer the finished product to a plate and pour over melted butter.

Potatoes are one of the first foods to appear in a child's diet after a year. They are nutritious, easily digestible, rich in potassium, B vitamins, and fiber. That is why potato dishes often become the basis for breakfasts, lunches, and even dinners on a children's menu. Take: 0,5 kg of potatoes • 2 tablespoons of sour cream • 1 small onion • dill (or other herbs) • 100 g of hard cheese • salt.

  1. Peel the potatoes, cut into thin slices.
  2. Finely chop the onion, fry it, and add it to the potatoes.
  3. Add sour cream and dill.
  4. Add salt, mix and let it steep for about half an hour.
  5. Place in a heatproof dish and bake for about 40 minutes.
  6. About 5 minutes before the dish is ready, sprinkle with grated cheese to melt.
