Lace pancakes, pancakes with holes, air pancakes, openwork pancakes - that's what they call this top aerobatics of the hostess - the ability to cook the most delicate pancakes!

What is the secret of pancakes with holes? In the air? Thanks to the air bubbles that burst when heated, the pancakes turn out openwork. Hence the question — how to saturate the dough for pancakes with air and in this way provide the pancakes with the necessary lightness?

To prepare openwork pancakes, you can and should go two ways: choose exactly the ingredients that allow the dough to turn into a work of art after baking. And knead the dough correctly. Let's start with the ingredients.
Air bubbles are the result of fermentation in the dough. This process can be ensured in several ways:

  • Add a little yeast to the pancake batter.
  • Knead the dough for pancakes, adding baking soda to it. The more soda, the greater the probability that the thinnest lace of holes will appear on the pancakes. But remember that soda has a taste and is not the most pleasant. Therefore, know the measure.
  • The dough can be kneaded in sparkling mineral water. And also on whey, kefir, ayran and even beer. In the first case, the work of saturating the dough with air was undertaken by mineral water producers, in the second, by bacteria living in sour milk.

Openwork pancakes — verified recipe 

Some housewives claim that the best way to cook pancakes with holes is to boil the dough with boiling water. This is done like this:

Take 2 eggs, add a pinch of salt and beat them with a mixer until a strong foam is formed (remember about saturating the dough with air, right?). Then, without stopping to beat the eggs, pour boiling water into them - 1 cup. Eggs will not curdle due to the high speed of whipping and because after whipping it is already a somewhat different product, which does not react so quickly to high temperature.

Then add a glass of low-fat kefir and, continuing to whip, add 1 tsp. l. baking soda, then 1-2 tbsp. l. sugar and 2 tbsp. l. vegetable oil. Add the flour without stopping the whipping. You will need approximately 1 - 1 cups of flour. Openwork pancakes on such a dough - guaranteed!

Another secret of openwork pancakes is in the insistence of the dough: let the dough stand for at least a while - give the fermentation bacteria an opportunity to do their work - live and multiply with the formation of a large number of microbubbles of air.

And the last piece of advice: if the task of cooking openwork pancakes is important for you (you are expecting guests for Maslenitsa 2024 and you want to surprise everyone), experiment with the method of baking pancakes. To do this, pour the dough into a soft bottle (from mineral water, kefir, milk - whatever you need!), make a hole in the lid with a diameter of 2-3 mm and - draw! Yes, just draw patterns on the pan.

But remember - you need to do it quickly, otherwise the pancake will burn on one side, and you are still drawing on the other. And do not forget that the openwork threads must be connected to each other in a sufficiently dense lace fabric. Otherwise, you won't be able to flip the pancake. Start with a simple grid. A heart with holes is a beautiful aerobatics!
