Traditionally, wheat was considered the basis of kutia, however, there are other options. For example, you can prepare no less delicious kutya from rice, barley, buckwheat or bulgur. But kutya is prepared not only on Christmas Eve - a rich kutya, but also on the eve of the "old" New Year - a generous kutya, and before Baptism - a hungry kutya.
Kutya from wheat

Ingredients:
- Wheat - 200 g
- Water - 2-3 glasses
- Vegetable oil - 1 tbsp. spoon
- Poppy seeds — 100-125 g
- Raisins - 100 g
- Walnuts - 100 g
- Honey - 3-4 tbsp. spoons
- Pinch of salt
Stewed fruit:
- Dried fruits - 200 g (apricots, apples, pears, prunes, cherries, etc.)
- Water - 2 glasses
Preparation:
- Sort and wash the wheat, soak it in cold water for 2-3 hours, maybe overnight. Polished wheat does not need to be soaked, it cooks quickly enough.
- Drain the water, pour clean water over the wheat, add a pinch of salt and vegetable oil. Cook until done.
- Poppy cover with boiling water and leave for 1 hour. Throw the poppy on a sieve, then grind it with a blender or in a coffee grinder until white "milk" appears.
- Raisins are poured with boiling water for 20 minutes, nuts are crushed, but not to the state of flour.
- Concoction: wash dried fruits well, pour water, bring to a boil, cook for 10 minutes, remove from heat and cool. Separate the dried fruits, cut them into pieces, and add honey to the warm concoction.
- Put the wheat in a bowl, add poppy seeds, chopped nuts, raisins, chopped dried fruits. Add the broth and mix well.

Ingredients:
- Rice - 250 g
- Raisins - 100 g
- Almonds – 100 g
- Sugar
- Cinnamon
Preparation:
- Wash the rice thoroughly, cover with water and cook until cooked (without stirring).
- Drain the rice in a colander and rinse with cold, boiled water.
- Pour boiling water over almonds and raisins. It is better to grind almonds.
- Dissolve the sugar in a small amount of water to make a syrup.
- Mix rice, almonds, cinnamon and raisins. The finished dish is poured with sugar syrup, you can replace it with honey.

Ingredients:
- Pearl barley - 200 g
- Poppy seeds - 150 g
- Peeled walnuts - 50 g
- Raisins - 50 g
- Honey and sugar to taste
- Cream - 1/2 cup
Preparation:
- Wash pearl barley and pour water in a ratio of 1:3.
- Cook pearl barley until ready and cool.
- Poppy seeds are poured with boiling water and cooked until they are easily rubbed with your fingers.
- After that, the poppy seeds are drained and ground through a meat grinder.
- Raisins are steamed in boiling water for 5-10 minutes.
- Add poppy seeds, chopped nuts, raisins, honey and sugar to taste to the porridge.
- Mix all the ingredients thoroughly and add cream.

- Rice - 250 g
- Almonds – 100 g
- Raisins - 100 g
- Cinnamon
- Sugar and powdered sugar to taste
Preparation:
- Wash the rice thoroughly, cover with water, bring to a boil. Put it on a sieve, rinse with cold water, pour it back into the pot and cook until done.
- Keep the almonds scalded with boiling water for half an hour, then grind them and add sugar.
- Pour boiling water over the raisins and keep them in the water for 10-15 minutes, then drain the water and dry the raisins on a paper towel.
- Add raisins, almonds, cinnamon to the finished rice and mix.
Barley bowl with frozen berries

Ingredients:
- Barley - 0,5 cups
- Water - 6-7 glasses
- Sugar or honey - 3-4 tbsp. spoons
- Frozen berries (raspberries, strawberries, currants) - 250-300 g
- Yellow and black raisins - 0,5 cups
- Stoneless cherries from compote or jam - 1 cup
- Sugar to taste
Preparation:
- Wash the barley, soak it in cold water overnight. Boil in the same water on low heat for about 1 hour.
- Add sugar, frozen berries, cook for another 20-30 minutes.
- Put cherries from compote or jam, cook for another 10 minutes. Best served chilled.
Kutya made of pearl barley with cranberries

Ingredients:
- Pearl barley - 250 g
- Cranberries (can be dried) - 50 g
- Lemon juice of half a lemon
- Poppy seeds - 50 g
- Raisins - 30 g
- Walnuts - 50 g
- Honey - 1 tbsp. spoon
Preparation:
- Wash the pearl barley and soak it in cold water overnight.
- Steam the poppy seeds with boiling water, let them swell for 30 minutes, drain them through a sieve and grind them in a mortar or blender bowl until "milk" appears.
- Combine all the ingredients, mix well, season with honey and lemon juice. Leave to infuse for at least 30 minutes.
Kutya in a slow cooker

Ingredients:
- Wheat - 200 g
- Poppy seeds - 120 g
- Raisins - 150 g
- Sugars - 50 g
- Med - 50 g
- Chernosliv - 70 g
- Dried apricots - 100 g
Preparation:
- Wash the wheat under cold running water. Pour it into a multicooker, pour 400 ml of water and cook in the "Porridge" mode for 40 minutes. Transfer the prepared wheat to another dish.
- Put the washed prunes and dried apricots in the multicooker bowl, add 300 ml of water and cook for 20 minutes in the "Soup" mode. Remove the fruit, strain the concoction and add honey.
- Wash the raisins and pour boiling water over them for 15 minutes.
- Pour poppy seeds with water so that they are completely covered, bring to a boil and cook over medium heat for 10-15 minutes, stirring occasionally. Mix poppy seeds with sugar and grind with a blender.
- Cut the apricots and prunes from the compote into pieces.
- Add poppy seeds, raisins, dried apricots to the wheat, mix, pour the mixture.

- Walnuts - 50 g
- Med - 50 g
Preparation:
- Wash the wheat, soak for 2 hours, cook on low heat until ready (about 2 hours).

Ingredients:
- Bulgur — 200 g
- Sesame seeds — 2 tbsp. spoons
- Sunflower seeds - 2 tbsp. spoons
- Raisins - 100 g
- Poppy seeds - 100 g
- Walnuts - 100 g
- Pinch of salt
- Honey - 2 tbsp. spoons
Preparation:
- Boil bulgur until soft for 15-20 minutes. Let cool.
- Steam raisins and poppy seeds, grind walnuts.
- Grind steamed poppy seeds in a mortar or grind with a blender, mix with honey.
- Season bulgur with raisins, poppy seeds, add seeds and sesame, mix.
Buckwheat kutia

Ingredients:
- Buckwheat - 1 glass
- Chernosliv - 300 g
- Almonds – 100 g
- Med - 150 g
- Poppy seeds - 50 g
- Cardamom - 10 g
Preparation:
- Sift and wash buckwheat groats. Boil buckwheat porridge, salt it a little.
- Wash the prunes, dry them, cut them into pieces.
- Poppy cover with boiling water and leave for 30 minutes, drain the water.
- Roast the almonds in a dry pan, grind them.
- Dilute honey in 0,5 liters of water, heat to boiling over low heat, but do not boil, add cardamom.
- Mix buckwheat with prunes, almonds and poppy seeds, pour honey syrup before serving.
