Broccoli is a true superfood among vegetables. It is rich in vitamins C, K, folic acid, fiber and antioxidants that support the immune system, help with bowel function and promote brain development in children. In addition, broccoli is easily digestible and suitable for feeding babies from an early age.
Broccoli dishes are not only healthy, but also very tasty! Due to its versatility, broccoli can be added to soups, stews, casseroles, pancakes or even made into smoothies, so it is easy to include in menu both children and adults.
Broccoli puree soup
Ingredients: 200 g potatoes, 200 broccoli, 1 small carrot, 1 tbsp. cream
Preparation:
- Peel and wash the potatoes, cut them into cubes.
- Do the same with carrots.
- Wash the broccoli, separate it into florets, and cut off the hard parts of the stem.
- Pour water into a liter saucepan, bring to a boil, and lightly salt.
- Put the vegetables in boiling water and boil for 15 minutes.
- Remove from heat and puree with an immersion blender.
- When serving, add a little cream to each plate.
IMPORTANT! If your child is under 2 years old, you do not need to salt or pepper their food!

Chicken and broccoli tart
Ingredients: chicken fillet - 600-700 g, broccoli - 400 g, wheat flour - 250 g, cream - half a glass, eggs - 3 pcs., hard cheese - 100 g, butter - 4 tbsp. spoons, vegetable oil - 4 tbsp. spoons, onion - 1 pc., salt and spices
Preparation:
- Cook the chicken fillet until cooked.
- Remove from the pan, cool slightly, cut into small slices and fry in a pan for 2-3 minutes.
- Peel, chop and fry the onion and broccoli separately.
- Mix all prepared ingredients in a separate container, add salt and pepper to taste.
- Rub the soft butter with the flour into crumbs, then knead with your hands until you get an elastic dough.
- Wrap the dough in cling film and place in the refrigerator for 40-50 minutes.
- For the filling, beat the egg with salt and cream.
- Add grated cheese to the beaten egg.
- Remove the dough from the refrigerator, spread it in an even layer in a mold with high sides.
- Spread the filling and pour over the egg mixture.
- Bake at 180-200°C for about 30-40 minutes.

Broccoli souffle
Ingredients: broccoli — 400-500 g, chicken egg — 1 pc., hard cheese — 25 g, starch — 2 tbsp. spoons, cream 10% — 2 tbsp. spoons, butter for greasing, salt to taste
Preparation:
- Divide the broccoli into florets and boil in salted water for 7-10 minutes.
- Remove and puree with a blender.
- Add cream mixed with starch and yolk to the broccoli.
- Beat the egg white and add it to the broccoli puree.
- Add the grated cheese, stirring gently with a wooden spoon.
- Grease the soufflé molds with butter and fill them about two-thirds full.
- Bake in the oven at 180°C in a water bath for about 30 – 40 minutes.
- You can serve it with sour cream and herbs.

Lasagna with broccoli and cauliflower
Ingredients: broccoli — 100 g, cauliflower — 100 g, red bell pepper — 1 pc., wheat flour — 4 tbsp. spoons, nutmeg, dry lasagna sheets — 6 pcs., carrot — 1 pc., cherry tomatoes — 3 pcs., minced chicken — 300 g, vegetable oil — 6 tbsp. spoons, milk — 900 ml, oregano, salt, breadcrumbs, ground black pepper — to taste
Preparation:
- Wash the bell pepper, carrots, broccoli and cauliflower, dry them and cut them into small cubes.
- Chop the parsley, cut the tomatoes into cubes.
- Heat 2 tablespoons of vegetable oil in a frying pan, fry the bell pepper, carrots, broccoli, and cauliflower over low heat for about 10 minutes.
- Prepare the béchamel sauce. To do this, heat 4 tablespoons of oil in a thick-bottomed saucepan, add the flour and fry for 2 minutes, stirring constantly.
- Pour the milk into the flour in a thin stream, stirring constantly; add the spices: basil, oregano, salt, pepper and nutmeg. Bring to a boil, when the sauce thickens, remove from heat.
- On a baking sheet, layer the lasagna in the following order: lasagna sheet, vegetables, tomatoes, herbs (boil the lasagna sheets if necessary). Pour bechamel over each layer.
- The last layer is vegetables, which also need to be poured with sauce.
- Sprinkle the lasagna with breadcrumbs and bake in a preheated oven at 180°C for 35-40 minutes.

Minced chicken casserole with broccoli
Ingredients: broccoli — 400 g, minced chicken — 300 g, chicken eggs — 4 pcs., sour cream — 3 tbsp. spoons, cherry tomatoes — 250 g, hard cheese — 200 g, salt, spices to taste
Preparation:
- Wash the vegetables, cut the cherry tomatoes in half.
- Grate the cheese on a fine grater.
- Beat the eggs with sour cream, salt and spices.
- In a baking dish, layer the following: minced chicken, broccoli, tomatoes, grated cheese. Repeat 2 times, the last layer being grated cheese.
- Pour over beaten eggs.
- Bake at 200°C for 1 hour 20 minutes.
- Alternatively, you can add 100 g of boiled pasta to the casserole (by reducing the amount of vegetables) - you will get a kind of lazy lasagna.

Cutlets with cauliflower and broccoli
Ingredients: minced chicken — 500 g, cauliflower — 200 g, broccoli — 200 g, chicken egg — 1 pc., salt and pepper to taste, breadcrumbs
Preparation:
- Put the minced meat in a deep bowl, add the egg and mix.
- Separate broccoli and cauliflower into florets, boil, and chop in a blender.
- Add cabbage to the minced meat.
- Add salt, pepper, and a few tablespoons of breadcrumbs to the resulting mixture, and mix.
- Pour breadcrumbs into a plate and form cutlets.
- Roll each cutlet in breadcrumbs and place on a greased baking sheet.
- Cook in the oven at 200°C for 30 minutes.

Frittata with broccoli and sweet pepper
Ingredients: chicken eggs - 6 pcs., sweet pepper - 3 pcs., red onion - 1 pc., parsley - 20 g, broccoli - 150 g, one quarter of a lemon, vegetable oil - 50 ml, garlic - 2 cloves, butter - 30 g, salt, nutmeg, black pepper and paprika - to taste
Preparation:
- Mix the eggs with salt and spices.
- Separate the broccoli into florets, clean the pepper, remove the skin and cut into thin strips.
- Cut the onion into half rings.
- Finely chop the garlic and parsley, mix with lemon juice and vegetable oil.
- Fry the onion in butter until soft, add the broccoli, fry for another minute.
- Add the peppers to the vegetables in the pan, fry for another minute.
- After another 2 minutes, add the parsley and garlic in the lemon juice and oil to the cabbage.
- After 30 seconds, pour in the eggs.
- When the eggs begin to set, place the pan in an oven preheated to 180°C for 7-10 minutes.

Fusilli with fish and broccoli
Ingredients: salmon - 250 g, fusilli pasta - 200 g, cream - 100 g, broccoli - 50 g, onion - half a small head, vegetable oil - 30 g, fresh basil - 1 sprig, salt and pepper to taste, garlic - 1 clove
Preparation:
- Clean the fish, wash it, dry it with a paper towel, and cut it into 1,5x1,5 cm squares.
- Finely chop the onion and fry in oil, add the garlic.
- Boil the fusilli.
- Add the fish to the onion and fry for 3 minutes. Season with pepper and salt to taste.
- Add cream to fish and onions, heat for a few minutes.
- A minute before the pasta is ready, add the broccoli florets to the pan, boil everything together for a minute. Drain the water.
- Mix the finished broccoli pasta with the fish and heat through.
- When serving, you can garnish with fresh basil and sliced tomatoes.

Salmon baked with broccoli
Ingredients: salmon fillet - 500 g, broccoli - 500 g, lemon juice - 2 tbsp. spoons, butter - 4 tbsp. spoons, hard cheese - 125 g, milk - 200 ml, cream - 100 ml, chicken eggs - 4 pcs., nutmeg - a pinch, salt and pepper to taste
Preparation:
- Cut the salmon fillet into slices, sprinkle with lemon juice, salt and pepper to taste and leave to marinate for 30 minutes.
- Place broccoli florets in boiling salted water and cook for 5 minutes.
- For the filling, mix the eggs, cream, and milk, and whisk.
- Add grated cheese, salt, pepper and nutmeg.
- Grease the baking dish with oil.
- Layer the broccoli and fish, pour over the cream mixture.
- Bake for 20 minutes at 220°C.

Broccoli baked with mozzarella
Ingredients: broccoli - 400 g, Mozzarella cheese - 150 g, 2 small tomatoes, basil, oregano - a pinch of dried herbs, salt to taste, vegetable oil for greasing the mold
Preparation:
- Wash the broccoli and separate it into florets.
- Wash the tomatoes and cut them into slices.
- Boil the broccoli in salted water for 2-3 minutes, drain in a colander and let the water drain.
- Cut the cheese into thin slices.
- Grease the baking dish with oil.
- Transfer the broccoli to a dish.
- On top are slices of mozzarella mixed with tomatoes, then dried herbs.
- Cover with foil.
- Bake in an oven preheated to 200°C for about 15 minutes.
